A GF Doughnut Recipe That Really is as Good as it Gets

Gluten Free Coconut Doughnut Holes

Servings: 2 dozen doughnut holes

1/2 cup xylitol  

1/4 teaspoon unrefined sea salt

1/2 cup extra virgin coconut oil

1/2 teaspoon pure vanilla extract

1/4 teaspoon ground nutmeg

2 organic eggs

¾ cup tablespoons coconut flour

1/2 cup powdered xylitol or raw cacao powder

Preheat oven to 350 degrees. Lightly grease a glass baking dish with coconut oil.

In a medium bowl, cream xylitol, salt, coconut oil, nutmeg, and vanilla together with an electric hand mixer or food processor. Add eggs and mix thoroughly.

Add coconut flour and stir to combine. Let dough sit for 5 minutes. Shape dough into 24 1-inch balls. Place evenly on baking dish and bake for 15 minutes.

Let cool and roll in powdered xylitol or raw cacao powder. You can also combine both and add cinnamon.

Tip: xylitol crystals can be powdered in a coffee grinder.
